Uncle Nick's White Spghetti

put a cube of butter in a big ol skillet, crushed or minced garlic to taste
(mertz uses a lot, expecially whne speaking of ourself in 3rd person.. plural...)
red wine, please.
melt butter, saute garlic a little, throw noodles in before the garlic browns.
grated parmesan is otpional, and shaved parmesan is just icing on the cake.
my favorite part is where the cheese and garlic stick together and get a little bit... FRIED.
maybe I should just pursue that part further sometime...

the story goes that Uncle Nick and Granpa Jimmy arrived at Ellis Island with signs around their necks that had their names and a simple phrase; I'm Jimmy Tsapralis from Greece, I speak no English, I work hard, trustworty etc.
but sposedly, they had killed a guy back in the old country, for dis-honoring their sister. who knows if any of that is true.
Mom says Uncle Nick tied a string around his wallet. but he made a mean lemon chicken. and the spaghetti recipe above.
